1.) Brimful Oâ€™Spaghetti
1 cup cooked whole-wheat spaghetti
1 cup sliced bell pepper
2/3 cup cooked edamame
1/2 cup sliced red onion
1 tsp olive oil
Cook the pasta according to instructions. Heat olive oil and sautÃ© onions until they are translucent. Add bell peppers until they are soft. Toss in pasta and edamame.

2.) Veggie and Beef Salad
1/4 chopped red bell pepper
1/2 cup chopped broccoli florets
2 cups mesclun greens
2 tbsp dry red quinoa
3 oz cooked lean beef, cubed
2 tsp olive oil
1 tsp red wine vinegar
Cook quinoa as directed. Toss with greens, beef, broccoli, and pepper in a bowl. Whisk oil and vinegar for dressing.
3.) Lazy Homemade Soup With Asparagus
1 cup of canned chunky vegetable soup (Amyâ€™s Organic Chunky Vegetable soup recommended)
4 oz boneless, skinless chicken breast
10 small asparagus spears
1 cup chopped kale
2 Tbsp dry quinoa
2 tsp soy sauce
1/8 tsp grated fresh ginger
Preheat oven. Bake chicken at 350Â°F for 25 minutes, then shred with a fork. Meanwhile, combine soup, quinoa, and kale in a saucepan, bring to a boil, and simmer until quinoa is done, about 15 minutes. Add the shredded chicken. Steam asparagus, then toss with soy sauce and ginger. Serve asparagus on the side.
