Ingredients

  • 1 tbsp horseradish, drained
  • 3 tsp apple cider vinegar
  • 1 1/2 tsp fresh lemon juice
  • 1 1/2 tsp pure maple syrup

  • 1/2 Golden Delicious apple, peeled and cored
  • 1/2 Granny Smith apple, peeled and cored
  • 1 (6 oz, 1.4 in thick) strip loin steak
  • 1 tbsp olive oil
  • 1 1/2 tsp butter (optional)
  • 1 sprig fresh thyme

Instructions

  1. Position the oven rack in the lowest slot. Preheat the oven to 430°F (220°C).
  2. Mix the horseradish, vinegar, lemon juice, syrup, salt and pepper in a bowl. Stir in the apples. Set aside.
  3. Heat an oven-safe skillet over high heat. Pat the steak dry with paper towels. Add the oil to the pan and swirl to coat. When the oil shimmers, add the steak.
  4. Sear for 2 minutes. Lift the steak with tongs and place it back on the SAME side. Sear one more minute, then flip. Move the pan to the lowest oven rack and roast for 4 minutes.
  5. Carefully add the butter and thyme to the pan. Baste the steak with the melted butter. Continue for 2–3 minutes for medium-rare.
  6. Remove the pan from the oven and baste again. Transfer the steak to a cutting board and rest for 5 minutes.
  7. Slice the steak at an angle against the grain. Serve with the apple sauce.
