Ingredients
- 2 slices nitrite/nitrate-free bacon
- 1 tsp melted bacon fat, for greasing
- 2 eggs
- 1 small tomato, cut into 4 (1 cm thick) slices
- 2 tbsp onion, minced
- 2 white mushrooms, minced
- 1/4 tsp freshly ground black pepper
Instructions
- Preheat the oven to 320°F (160°C).
- Fry the bacon in a skillet over medium heat until it starts to shrink (about 3 minutes). Remove the bacon and set it aside.
- Pour off the fat, leaving just a thin film.
- Brush 2 cups of a muffin tin and 2 small ramekins with the bacon fat from the pan.
- Sauté the minced onion and mushrooms in the remaining bacon fat over medium heat until soft.
- Meanwhile, place one tomato slice in the bottom of each greased cup. Lay one bacon strip around the rim of each cup.
- Crack an egg into each cup and season with pepper.
- Top each egg with the sautéed mushrooms and onions.
- Fill the unused cups with water to prevent burning.
- Bake for 20 minutes.
- To serve, loosen the eggs from the edges of the cups and slide them onto plates.
