- 2 cups watermelon, seeded and diced
- 1 cup cantaloupe, diced
- 2 fresh mint leaves (or 1 peppermint tea bag)
- 1/2 cup water
- 1 lemon, juiced
- 6 small paper cups and a muffin tin
Instructions
- Blend the melons into a soft purée.
- Place a pan over medium heat and pour in the purée. Simmer for 15 minutes.
- Meanwhile, pour a cup of water into another pan and boil the mint in it for 3 minutes.
- Squeeze out the mint and pour the mint water over the melon purée.
- Turn off the heat and add the lemon juice.
- Line a muffin tin with paper muffin liners.
- Pour the purée into the cups and place in the freezer.
- Insert wooden sticks as the mixture begins to set.
- Freeze until completely firm.
- Remove the paper before serving.
