Ingredients

  • 1/2 lb parsnips, peeled and cored
  • 1 tbsp olive oil
  • 1 tsp onion salt
  • 1 slice bacon
  • 1/4 lb zucchini, sliced
  • 1/4 lb white mushrooms, sliced
  • 1 stalk celery, diced
  • 1 tsp coconut oil
  • 1/4 red onion, finely diced
  • 3/4 lb ground turkey
  • 1 green onion, sliced
  • 2 tsp Italian seasoning
  • 1/4 tsp celery salt
  • 1/4 tsp freshly ground black pepper
  • 4 eggs, separated
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 430°F (220°C).
  2. Peel and grate the parsnips. Toss with onion salt and olive oil; set aside.
  3. Fry the bacon strip in a large skillet over medium heat. Reserve the bacon fat. Let the bacon cool, crumble it and set aside.
  4. Add the zucchini, mushrooms and celery to the pan with the bacon fat and sauté until the vegetables soften.
  5. Warm another pan over medium heat and add the coconut oil once hot. Add the onions, ground turkey, Italian seasoning, celery salt and black pepper (to taste). Sauté until the turkey is cooked.
  6. Thoroughly combine the meat and vegetables in one pan. Let cool for 5 minutes.
  7. Mix 2 egg whites with the parsley and fold into the meat and vegetable mixture.
  8. Fold the other 2 egg whites into the parsnips.
  9. Coat a small baking sheet with olive oil.
  10. Spread the vegetable mixture on the sheet, top with the parsnip mixture and sprinkle with bacon.
  11. Bake about 25 minutes until the top is brown.
