Ingredients
- 300 g mushrooms
- 30 g chorizo salami
- 50 g mozzarella, grated
- 1 tbsp chives, chopped
- 1/2 tsp chipotle chili powder (optional)
- 4 eggs
- 1 (85 g) onion
- 15 g butter

Instructions
- Halve the onion and cut into half-rings. Clean the mushrooms, remove the stems and slice. Finely chop the chives. Whisk 4 eggs with salt, pepper and chili.
- Melt 15 g butter in a skillet and sauté the mushrooms and onions for 3 minutes. Set aside in a bowl.
- Pour the egg mixture into the pan and let it set over medium heat for 5 minutes. Scatter the mushrooms, onions, mozzarella and chives over one half and fold the omelette closed. Divide into 2 portions and serve.
