Ingredients

  • 500 g zucchini
  • 360 g ground beef
  • 4 large (240 g) mushrooms
  • 30 g parmesan, grated
  • 40 g (2 slices) cheddar
  • 40 g cream cheese (double cream)
  • 1/4 tsp chipotle chili powder
  • 40 g mayonnaise
  • 15 g butter
  • 1/2 (40 g) onion
  • 1 tbsp olive oil
  • 1/4 tsp rosemary
  • 1/4 tsp thyme
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F (200°C) convection. Quarter the zucchini lengthwise and halve the sticks crosswise. Mix the parmesan with 1/4 tsp each of pepper, rosemary, thyme and salt.
  2. Spread the zucchini fries on a parchment-lined tray, brush with 1 tbsp olive oil, sprinkle with the parmesan mix and bake 15 minutes at 400°F (200°C) convection.
  3. Season the ground beef with 1/2 tsp pepper and 1/4 tsp salt; form 2 patties. Remove the mushroom stems. Fry the burgers and mushrooms in 15 g butter.
  4. After 5 minutes flip the burgers, lay the cheddar slices on top and fry 10 more minutes.
  5. Meanwhile, stir 40 g mayonnaise with the cream cheese, a little water, 1/4 tsp salt and chili. Slice 1/2 onion (40 g) into half-rings.
  6. Stack: mushroom, patty with cheese, onions, mushroom. Fix with a skewer if needed and serve with the fries and dip.
