Ingredients

  • 250 g salmon fillet (2 x 125 g)
  • 500 g zucchini
  • 1 small (150 g) avocado
  • 1/4 tsp chipotle chili powder
  • 1 clove garlic
  • 2 limes, juiced
  • 1/2 (40 g) onion
  • 2 tbsp olive oil
  • to taste salt and pepper

Instructions

  2. Wash and pat the zucchini dry; slice. Press the garlic and mix in a small bowl with 1 tbsp olive oil, juice of 1 lime and a little salt.
  3. Add the zucchini slices to a skillet, brush with the marinade and sear.
  4. In another pan, sear the marinated salmon.
  5. For the salsa, dice 1/2 onion (40 g) and the avocado; stir with the juice of 1 lime and 1/4 tsp salt.
  6. To serve, arrange the zucchini slices on 2 plates, top each with a salmon fillet and crown with the avocado salsa.
