- 350 g salmon fillet
- 2 (800 g) cucumbers
- 10 g coconut flour
- 15 g mayonnaise
- 200 g cream cheese (double cream)
- 2 tbsp chives
- 1/2 lime, juiced
- 15 g Dijon mustard
- 1/2 (40 g) onion
- 1 tbsp butter
- to taste salt and pepper
Instructions
- Finely chop 1/2 onion (40 g) and the chives. For the burger mix, roughly chop the salmon and blend with the onions, half the chives, coconut flour, lime juice, mayonnaise and mustard; season with salt and pepper.
- Peel the cucumbers, halve and scoop out the seeds. Slice and fry in a pan with the remaining chives and the cream cheese; season with salt and a little pepper.
- Meanwhile, form the salmon mixture into 6 equal patties and fry crispy on both sides in 1 tbsp butter.
- Divide the cucumber salad between 2 plates, leaving some sauce in the pan. Top with 3 salmon burgers each and drizzle with the remaining sauce.
