  • Servings: 1
  • Diet: Paleo, gluten-free, grain-free, dairy-free
  • Difficulty: Easy

Ingredients

  • 1/2 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1 1/2 tsp coconut flour
  • 1 egg
  • 2 tbsp water (or sparkling water for extra lift)
  • 1/8 tsp freshly grated nutmeg
  • 1/8 tsp sea salt
  • 1 tsp coconut oil

Instructions

  2. Warm a skillet over medium heat with 1 tsp coconut oil.
  3. Once hot, pour 1/4 cup of batter into the skillet. Spread it out if desired.
  4. When bubbles form (like regular pancakes), flip and cook for 1–2 more minutes.
  5. Add more oil and repeat with the remaining batter.
  6. Serve with fresh berries.

Tips & Variations

If the pan is too hot, the batter will burn at the edges, stick, or stay raw in the middle. Watch the heat!
