Ingredients

  • 1 poblano, green chili or red bell pepper
  • 2 eggs
  • 1/2 tsp freshly ground black pepper
  • 1 tsp coconut oil
  • 1/4 lb nitrite/nitrate-free sausage, cooked and sliced
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Roast the pepper in a thick-bottomed pan over high heat. Turn it as soon as the skin blisters and blackens. When evenly charred, place it in a plastic bag, seal it and let it steam for 5 minutes. Remove from the bag, cut out the seeds, peel off the skin and chop small.
  2. Crack the eggs into a small bowl and season with pepper.
  3. Heat a medium skillet over medium heat. Add 1 tsp coconut oil once hot.
  4. Pour half the egg mixture into the pan. While the egg cooks, scatter the remaining ingredients over one half of the pan.
  5. Once the egg is set, fold the egg over the filling and cook for one more minute.
  6. Repeat with the second omelette.
