Why You’ll Love This Recipe
- Time: 15 minutes prep, 12 minutes cook
- Servings: 1
- Diet: Paleo, gluten-free, grain-free, dairy-free
- Difficulty: Easy
Ingredients
- 1/2 head cauliflower, chopped into small florets
- 1 stalk celery, diced
- 1/4 yellow onion, finely diced
- 1 tsp fresh parsley, finely chopped
- 1 hard-boiled egg, peeled and diced
- 1 tbsp mayonnaise (Paleo-friendly)
- 1 1/2 tsp Dijon mustard
- 1/4 tsp sea salt (optional)
Instructions
- Add a little water to a medium pot with a lid. Place a steamer basket inside and fill it with the chopped cauliflower. Cover.
- Steam the cauliflower over medium-high heat until just tender, about 10 minutes after the water starts simmering (overcooking causes a strong cauliflower smell and a mushy texture).
- Drain the cauliflower and rinse it with cold water. Transfer to a large bowl.
- Add celery, onion, parsley and egg.
- Stir in the mayonnaise, Dijon mustard and sea salt (if desired).
- Serve immediately or chill in the fridge to let the flavors meld.
Tips & Variations
Don’t overcook the cauliflower — it should keep a slight bite so it feels like real potato salad.
