  1. Marinate the chicken in 2 tbsp olive oil, lemon juice, sea salt and freshly ground black pepper for 30–60 minutes, turning several times.
  2. Preheat the oven to 375°F (190°C).
  3. In a large skillet, sauté the garlic and onion in the remaining olive oil.
  4. Add the tomatoes and olives; sauté uncovered for 15 minutes, stirring often.
  5. Stir in the parsley and thyme.
  6. Place the chicken breasts in a baking dish and pour the sauce over them.
  7. Cover and bake for 35–40 minutes.
