Ingredients
- 170 g frozen leaf spinach
- 250 g chicken breast
- 400 g zucchini
- 2 egg yolks
- 75 g mascarpone
- 45 g chorizo salami
- 250 ml heavy cream
- 1 clove garlic
- 1 (85 g) onion
- 20 g butter

Instructions
- Thaw the spinach and squeeze out the excess water. Dice the chorizo, onion (85 g) and garlic; sauté half the mixture in 10 g butter.
- Cut the chicken into small pieces and add to the pan. Blend the cooked mixture with the spinach, mascarpone and an immersion blender until homogeneous; season with salt and pepper.
- Cut the zucchini into long wide strips with a peeler. Lay 2 strips crosswise over each other, place a heaped tablespoon of filling in the center and fold the strips over to form ravioli.
- Melt 10 g butter in a large skillet and fry the ravioli.
- In a small pot, gently cook the other half of the onion-chorizo mixture in 10 g butter. Deglaze with the cream and bring to a boil. Finally stir in the egg yolks and serve the sauce over the ravioli.
