  • 230 g cauliflower
  • 200 ml coconut milk
  • 1–2 pinches vanilla
  • 1 tsp cinnamon or cinnamon blossom
  • 70 g xylitol
  • 30 g chia seeds

Instructions

  1. Wash the cauliflower, remove the core and grate the florets very finely (with a cheese grater or food processor).
  2. Heat the grated cauliflower, coconut milk, vanilla and 50 g xylitol in a pot; simmer over medium heat for 8 minutes. Stir in 30 g chia seeds and simmer 5 more minutes, stirring occasionally.
  3. Mix cinnamon with 20 g xylitol. Divide the rice pudding between 2 bowls and sprinkle with the cinnamon-xylitol mix. Shave 20 g butter into small curls with a teaspoon and dot on top.
