Ingredients

  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 head cauliflower, cored and cut into florets

Instructions

  1. Preheat the oven to 480°F (250°C).
  2. Toss the cauliflower, olive oil, cumin, sea salt (if desired) and black pepper in a large bowl.
  3. Spread the mixture on a baking sheet.
  4. Bake until the cauliflower is brown and tender, usually 25–30 minutes, stirring several times.
  5. Blend the tahini, garlic, lemon juice and roasted cauliflower in a blender until smooth (add a little olive oil if needed).
  6. Season with sea salt (if desired) and sprinkle with paprika.
  7. Serve warm, or chilled with vegetables.
