Ingredients

  • 1 cup almond flour
  • 3 tbsp almond butter
  • 2 eggs, beaten
  • 1/2 tsp sea salt
  • 3 tsp olive oil
  • 1/2 cup yellow onion, diced
  • 4 mushrooms, sliced
  • 1 large Italian sausage, cut into 1 cm slices
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup sugar-free marinara or tomato sauce
  • 1/2 tsp dried oregano
  • 1/2 tsp fennel seeds
  • 1/2 cup cherry tomatoes, halved

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Mix the almond flour, almond butter, eggs and sea salt in a small bowl.
  3. Coat a baking sheet with 2 tsp olive oil and spread the mixture into a 0.5 cm thick crust. Bake for 10 minutes.
  4. Meanwhile, add the remaining olive oil, onions, mushrooms and sliced sausage to a large skillet over medium heat; cook until the sausage is lightly browned and the onions are translucent. Remove from the pan and set aside.
  5. Add the garlic and peppers to the pan. Sauté for a few minutes. NOTE: don’t fully cook the vegetables, or they’ll be too soft on the pizza.
  6. Remove the crust from the oven and cover it with marinara or tomato sauce. Add the sausage and vegetables. Sprinkle with oregano and fennel, then bake for 20–30 minutes.
  7. Wait until the crust is fully baked, then remove from the oven and top with the cherry tomatoes.
  8. Lift the slices carefully from the sheet, since the crust will still be slightly soft.
