Ingredients
- 400 g large mushrooms
- 200 g bell peppers
- 400 g chicken breast
- 200 g cream cheese (double cream)
- 50 g parmesan
- 1 tsp Dijon mustard
- 1 tsp thyme
- 1 1/4 tsp chipotle chili powder
- 1 (85 g) onion
- 40 g mayonnaise
- 2 tbsp olive oil
- to taste salt and pepper
Instructions
- Preheat the oven to 400°F (200°C) convection. Stir 100 g cream cheese, parmesan, mustard and a pinch each of salt and pepper; fill into the stemmed mushrooms and place on a baking tray.
- Cut the peppers, onion (85 g) and chicken into chunks and thread alternately onto skewers; place on the tray. Mix 2 tbsp olive oil, thyme, 1/2 tsp salt, 1/2 tsp pepper and 1 tsp chili; brush over the skewers.
- Roast the mushrooms and skewers 15 minutes. For the dip, stir 40 g mayonnaise with 100 g cream cheese, 1 tbsp water, 1/4 tsp salt and 1/4 tsp chili.
