Ingredients
- 1 tsp coconut oil
- 2 eggs
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp sea salt (optional)
- 1 tbsp water
- 2 tbsp red onion, diced
- 2 tbsp green bell pepper, diced
- 1 tbsp jalapeño, diced (optional)
- 3 oz chicken breast, cooked and shredded
- 2 tbsp small tomato, diced

Instructions
- Warm the coconut oil in a medium skillet over medium heat.
- Meanwhile, crack the eggs into a small bowl. Add the cumin, chili powder, sea salt (if desired) and water. Mix with a fork until evenly combined.
- Add the onions, peppers and jalapeño to the hot pan. Sauté for 3–5 minutes.
- Add the eggs and chicken; cook while stirring constantly until the eggs are fluffy and soft.
- Remove from the heat. Stir in the tomatoes and garnish with cilantro.
