Ingredients

  • 2 cups watermelon, seeded and diced
  • 1 cup cantaloupe, diced
  • 2 fresh mint leaves (or 1 peppermint tea bag)
  • 1/2 cup water
  • 1 lemon, juiced
  • 6 small paper cups and a muffin tin

Instructions

  1. Blend the melons into a soft purée.
  2. Place a pan over medium heat and pour in the purée. Simmer for 15 minutes.
  3. Meanwhile, pour a cup of water into another pan and boil the mint in it for 3 minutes.
  4. Squeeze out the mint and pour the mint water over the melon purée.
  5. Turn off the heat and add the lemon juice.
  6. Line a muffin tin with paper muffin liners.
  7. Pour the purée into the cups and place in the freezer.
  8. Insert wooden sticks as the mixture begins to set.
  9. Freeze until completely firm.
  10. Remove the paper before serving.
