Ingredients
- 2 eggs
- 1 tsp coconut oil
- 1/2 small yellow onion, diced
- 1 small bell pepper, diced
- 1 small tomato, diced
- 1/2 cup spinach
- 1/4 cup cooked ham, diced
- to taste sea salt and freshly ground black pepper
Instructions
- Wash and chop the vegetables. Set aside.
- Crack the eggs into a small bowl and whisk. Set aside.
- Warm a skillet over medium heat. Add the coconut oil once hot.
- Pour the eggs into the pan and cover the bottom. Once the egg is partially set, lift the sides so the uncooked egg on top can flow onto the cooking surface.
- Soon after, place the vegetables and ham on one half of the omelette and wait until the egg is done.
- Fold the egg over the filling with a spatula. Cook 2 more minutes, then serve.
