Ingredients
- 2 tsp coconut oil
- 1/4 cup diced onion
- 1 small carrot, thinly sliced
- 1 small zucchini, thinly sliced
- 1 tsp fresh parsley, chopped
- 1/4 tsp dried thyme
- 1/8 tsp freshly ground black pepper
- 1 cup vegetable broth
Instructions
- Sauté the onions in the coconut oil in a large pan until translucent.
- Add all the other ingredients except the vegetable broth.
- Cover and cook on low heat, stirring occasionally, until the vegetables are done (about 10 minutes).
- Add the broth, increase the heat and bring to a boil.
- Reduce to medium heat and cook until the vegetables are soft (15–20 minutes).
- Remove from the heat and let cool slightly.
- Optional: remove 1/2 cup of soup and set it aside; blend the remaining soup. Combine the blended and reserved soup and reheat.
