Ingredients

  • 2 tsp coconut oil
  • 1/4 cup diced onion
  • 1 small carrot, thinly sliced
  • 1 small zucchini, thinly sliced
  • 1 tsp fresh parsley, chopped
  • 1/4 tsp dried thyme
  • 1/8 tsp freshly ground black pepper
  • 1 cup vegetable broth

Instructions

  1. Sauté the onions in the coconut oil in a large pan until translucent.
  2. Add all the other ingredients except the vegetable broth.
  3. Cover and cook on low heat, stirring occasionally, until the vegetables are done (about 10 minutes).
  4. Add the broth, increase the heat and bring to a boil.
  5. Reduce to medium heat and cook until the vegetables are soft (15–20 minutes).
  6. Remove from the heat and let cool slightly.
  7. Optional: remove 1/2 cup of soup and set it aside; blend the remaining soup. Combine the blended and reserved soup and reheat.
