Ingredients
- 2 tsp olive or coconut oil
- 1/2 zucchini, diced
- 1/4 red bell pepper, diced
- 1/4 red onion, diced
- 1 tsp fresh thyme
- 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 clove garlic, minced
- 1 small tomato, seeded and chopped
- 4 large eggs
Instructions
- Heat the coconut oil in an oven-safe skillet over medium heat. Once hot, add the zucchini, pepper, onion, thyme, sea salt, pepper and garlic.
- Cover and cook until the vegetables soften (about 5–7 minutes), stirring occasionally.
- Add the tomato. Cook uncovered for another 5 minutes.
- Whisk the eggs with the remaining salt and pepper until frothy.
- Pour the eggs over the vegetable mixture and stir gently. Cover, reduce the heat and cook for another 15 minutes.
- Meanwhile, warm a broiler on low heat. Finish the frittata under the broiler for 3 minutes.
- Slide onto a plate, cut into strips and serve warm.
