Ingredients

  • 2 tsp olive or coconut oil
  • 1/2 zucchini, diced
  • 1/4 red bell pepper, diced
  • 1/4 red onion, diced
  • 1 tsp fresh thyme
  • 1/4 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 clove garlic, minced
  • 1 small tomato, seeded and chopped
  • 4 large eggs

Instructions

  1. Heat the coconut oil in an oven-safe skillet over medium heat. Once hot, add the zucchini, pepper, onion, thyme, sea salt, pepper and garlic.
  2. Cover and cook until the vegetables soften (about 5–7 minutes), stirring occasionally.
  3. Add the tomato. Cook uncovered for another 5 minutes.
  4. Whisk the eggs with the remaining salt and pepper until frothy.
  5. Pour the eggs over the vegetable mixture and stir gently. Cover, reduce the heat and cook for another 15 minutes.
  6. Meanwhile, warm a broiler on low heat. Finish the frittata under the broiler for 3 minutes.
  7. Slide onto a plate, cut into strips and serve warm.
