Ingredients
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1/2 head cauliflower, cored and cut into florets
- 1/8 tsp sea salt (optional)
- 1/8 tsp freshly ground black pepper
- 1/4 cup tahini
- 1 clove garlic, mashed into a paste
- 1 lemon, juiced
- 1/8 tsp paprika
Instructions
- Preheat the oven to 480°F (250°C).
- Toss the cauliflower, olive oil, cumin, sea salt (if desired) and black pepper in a large bowl.
- Spread the mixture on a baking sheet.
- Bake until the cauliflower is brown and tender, usually 25–30 minutes, stirring several times.
- Blend the tahini, garlic, lemon juice and roasted cauliflower in a blender until smooth (add a little olive oil if needed).
- Season with sea salt (if desired) and sprinkle with paprika.
- Serve warm, or chilled with vegetables.
